Today, June 3rd, we're officially calling it Vegan Egg Day, and we’re here to show the world that you don’t need animal products to enjoy a classic, fluffy, egg-style breakfast. These Fluffy Vegan Scrambled Eggs from Minimalist Baker are the perfect plant-based alternative—rich, savory, and packed with protein. Whether you're vegan, egg-sensitive, or just curious, this recipe is a delicious way to honor the day with compassion and bold flavor.
What Makes These Vegan Scrambled Eggs Special?
Unlike tofu scrambles or chickpea flour mixes, this recipe uses split mung beans (moong dal), which create a batter that mimics the lightness and bounce of real scrambled eggs. Combined with black salt (kala namak) for that signature “eggy” flavor, and boosted by coconut milk, nutritional yeast, and turmeric, this dish is creamy, golden, and absolutely satisfying. The addition of rice flour and baking powder helps create that airy, just-set texture that feels like the real thing—without the cholesterol, cruelty, or environmental cost.
Ingredients You’ll Need:
3/4 cup split mung beans, rinsed (not whole mung beans)
1 to 1 ¼ tsp black salt (kala namak), or sea salt
1/2 tsp onion powder
3/4 tsp ground turmeric
2 tsp nutritional yeast
1 1/3 cup canned light coconut milk
2 Tbsp olive or avocado oil (plus more for cooking)
1/4 cup white or brown rice flour
1 1/4 tsp baking powder

Serve your vegan scramble with toast, avocado, or wrapped in a breakfast burrito. However you plate it, it’s a feel-good dish you can enjoy any time of day.
